Rib City Grill on KSL Channel 5 - Grilled Chicken Skewers

Toni also made a great tasting, easy to make dipping sauce.
Here is the recipe:
Citrus Ranch Dipping Sauce
Ingredients:
* 1 packet Ranch dressing mix
* Cilantro
* Juice of 1 lime
Method:
Mix dressing according to directions on packet. Stir in chopped cilantro and lime juice. Whisk together.

Shimano Stops by Rib City Grill after Tour of Utah
On the way out of town, after supporting the Tour of Utah (American's Toughest Stage Race) the Shimano Factory Support Team came by Rib City Grill (American Fork, Utah) on their way out of town.
We checked them out on the internet and found out these four guys have over 50 years of experience and are supporting 35 cycling events.
Toni J's daughter is also in the Bike Industry following cycling events in the Western US, so she wanted to make sure that these guys got good treatment at her place. We were glad to send them on their way with good BBQ from Rib City Grill

Rib City Grill and Vincent D'Onofrio raising money for Utah Police
Stay tuned for more details. The fundraiser will be Sept. 18, and raise money for detoxification treatments for police officers. A number of former or current Utah police officers have ben exposed methamphetamine labs or finished drugs left them with cancers, neurological problems and other assorted ailments. A few dozen have undergone the detoxification treatment, which utilizes a regimen of exercise and a diet of antioxidants.

Grilling vs BBQing - Are they the same?
The simple answer is NO. Most people are under the impression that BBQing and grilling are actually same method of cooking. No matter how you spell it, BBQing is long show cooking over wood coals. Grilling is cooking high heat and fast, no matter what the heat source.
Grilling is:
Searing lean cuts of meat directly over an open flame, at
Temperatures of 400-1200 degrees,
Cooking for 2-15 minutes
BBQing is:
Slow cooking of meat indirectly over heated coals
Temperatures of 180-260 degrees
Cooking for 5-18 hours
A recent article at CNN says it all
.....Barbecuing is low and slow, a process that takes 12 hours or more as meat is exposed to gentle, indirect heat in a smoker. Things get more complex with the addition of dry rub seasonings, wood flavoring and liquid injections to help keep the meat moist, but the end result is heavenly for barbecue fans.
"The product you end up with is the most tender, juicy piece of meat hopefully you've ever had in your life," Gellert said. Competitions can have both a grilling and a barbecue component, though grilling contests are mostly unique to the Northeast, and winning them doesn't result in the same bragging rights as the barbecue awards.....

Rib City Grill on Studio 5 NBC

Here is the highlights of Toni's interview
Quick BBQ Sauce base
1 cup Ketchup
1 teaspoon Yellow mustard
1/2 cup Brown sugar
1 tablespoon Honey
1 can Coke
Then you can add other ingredients depending on what you like. Try:
Raspberries / Liquid Smoke / Tabasco / Chili Powder /
Chili Peppers
To grill ribs, you can start with Baby Back Ribs or St. Louis Style Ribs.
Smoker:
Use your favorite wood type. At Rib City, we use oak. You can use a rub to infuse the flavor into the ribs. Then smoke them for 4 hours at 225 degrees. After that, wrap them in tin foil with a small amount of water and lather them with sauce. Wrap them in foil and grill them on a medium grill (225 degrees) for another 2 hours. The sauce and water create a steam effect.
For "Fall Off The Bone" ribs, you can let them cool down for ½ hour, then grill them with more sauce to warm them up.
Grill:
If you only have a BBQ Grill not a Smoker, get your favorite wood chips in a foil pan add some water to it making the wood chips wet. Then put the wood chips on the direct heat and cook your Baby Backs on the indirect heat with your favorite rub for 2 hours then repeat step 2 for another 2 hours or until Tender meat should fall off the bone from the steam effect.
Marinade:
If you want to skip the smoking, you can marinate the ribs for at least 2 hours in your refrigerator. (Rib City recommends marinating them overnight.)
Marinade recipe:
Salt / Pepper / Apple Juice /Water
Make enough to cover the ribs and let sit overnight. Then grill on your BBQ.

Join Rib City Grill @ American Fork's Steel Days Car Show
Rib City Grill will be in American Fork for their annual Steel Days Celebration on Saturday July 18th.
The Car show will be from 9 a.m. to 7 p.m. on Saturday in Rotary Park, 400 South and 200 East. Vintage and muscle cars and trucks will be on hand. The car show is free to the public and usually features one of the largest collections of vehicles in the state. There will also be a cruise featuring many of these vehicles, from 7 to 9 p.m. on Main Street.
At Rib City we know that checking out cars can make you hungry, so while you are at the Celebration come on by our booth and get some great BBQ.

Fun @ July 4th Celebration, Next Stop American Idol for Rib City Grill on July 14th
We hope all had a great time at the July 4th Celebration in Sandy. Kallie & Aisha caught the July 4th spirit and were able to keep cool in the 90 degree weather. Thanks for coming by the booth and having some of our BBQ pork sandwiches and 1/2 racks.

Visit Rib City Grill's Booth July 4th @ Sandy, UT City Hall Celebration
We are keeping busy outside of the restaurant by bring the best in Barbecue to you. This weekend we will be in the Food area of the Sandy, UT Fourth of July celebration this Saturday, July 4th.
Before you watch the fireworks at 10pm or after the patriotic parade at 6pm come over to our booth for some great tasting BBQ. We will be working the grill from 10am to 9pm.

Rib City Grill provides Provo Craft catering for 800
We Feed about 800 people on Friday 6/12/09 in Provo Canyon for Provo Craft. Provo Craft was celebrating their 40 years in business.
Provo Craft had a fun summer party with great weather holding out till after the party - what luck!! We brought a full group to serve, including Fallen,Toni, Aisha, Bronte and Vicky to quickly feed the hungry crowd.
We organized three lines so no one had to wait. We had plenty of food with some people come back for seconds, although most said the yummy pulled pork Sweet Coleslaw and BBQ beans filled them up fast...Every one was so nice.
Large or Small, we still have some spots left for your Summer Party, so call or email us!!

Rib City Grill raises over $7,000 for Cops and Kids Sharing Christmas

Anyone who would like to donate to help a child this year or in the future may make a check payable to the American Fork FOP Lodge and send it to the city at 51 E. Main, American Fork. FOP is the abbreviation for Fraternal Order of Police, a non-profit organization.
Fans of "Law and Order: Criminal Intent," those seeking to help others at Christmastime and customers who just enjoy barbecued food gathered together last week, with the result that six kids will have a chance to do some Christmas shopping with a police officer on Saturday.Click here for Article
Toni Jorgensen of Rib City Grill had a benefit for two days at the restaurant, calling in assistance from her brother, actor Vincent D'Onofrio, who stars in the TV show. She said she was pleased with the results of the fundraising.
"We raised almost $3,000 in American Fork," she said. The goal was originally $2,000, but the restaurant's customers exceeded that. In the Sandy location, they collected more than $4,000 to help the effort.
"Everybody was just excited to see Vincent," she said. "They were also supporting the cause."

"A number of my friends and associates are big fans of Rib City restaurant in Sandy (and also American Fork). I, however, had never made the trek there until last week when I had the opportunity to interview Law & Order: Criminal Intent star Vincent D’Onofrio. His sister Toni Jorgensen and her husband Ron opened both of the Utah Rib City restaurants, and D’Onofrio is also involved. He was kind enough to take time out from important charity work to sit down with me for a quick lunch at the Sandy restaurant.
D’Onofrio and his Rib City “family” help raise donations for charities like Shop With a Cop (in which kids go shopping with police officers for Christmas at Kmart), Cops & Kids Sharing Christmas and The Fallen Officer Memorial Fund. D’Onofrio and his wife are involved in a number of charitable organizations but prefer to keep quiet about them—except, that is, for when meeting the public, signing autographs and posing for photos might help to generate a donation or two. D’Onofrio and his family are, as they say, good people. More than talking about his next movie or TV show, he was thrilled to tell me about the guy who walked up to him and the police chief of American Fork the night before and handed him a $700 donation.
“That’s going straight to the kids!” D’Onofrio says, excitedly. He can hardly contain his enthusiasm when he talks about how donations large and small might improve an underprivileged kid’s Christmas..."
